Macaroni and Chicken Dishchicken-macaroni

  • 2 cups macaroni
  • 4 cups cooked cut up chicken
  • 1 cup diced cheese
  • 1 cup milk
  • 1 cup water
  • 2 cans cream of mushroom soup
  • 2 teaspoons finely chopped onion
  • 4 hard cooked eggs, cut in eighths
  • 1 teaspoon salt
  • Celery

In a 5-quart saucepan, cook macaroni ac­cording to package directions. Drain maca­roni and add remaining ingredients. Mix well and simmer about 10-15 minutes.

African Chicken

  • 3 pound fryer, cut up or 6 boneless breasts
  • 2 cups chopped onions
  • 2 tablespoons chopped garlic
  • 11/2 teaspoons chopped pimentos
  • V2 teaspoon ground ginger 11/4 cup water
  • 5 tablespoons oil
  • 1 cup lemon juice
  • 1 tablespoon salt
  • 1 teaspoon white pepper

In shallow baking pan, large enough for chicken, combine onions, garlic, pimento, ginger, salt, white pepper and lemon juice. Mix well. Pour in one cup water and one tablespoon oil. Stir and marinate 3 hours.

Heat remaining oil in a heavy skillet or Dutch oven. Remove chicken from mari­nade, pat dry. Brown in hot oil until tender (about 15 minutes). Remove chicken to platter.

Pour all but 2 tablespoons oil from skillet, strain marinade through sieve. Reheat 2 tablespoons oil and add solid contents of sieve. Cook 5 minutes. Return chicken to skillet, add marinade and 3/4 cup water. Bring to boil, reduce heat and partially cover. Simmer for 25 minutes. Serve over hot rice.

Baked Herbed Chicken Breasts

  • 8 chicken breasts, halved 1 cube butter
  • 1 clove garlic, crushed
  • 2 tablespoons Parmesan cheese 1 tablespoon parsley, dried (or 3 fresh sprigs)
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon sesame seeds
  • 1/2 teaspoon oregano
  • 1h teaspoon sweet basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Wash and pat dry chicken. Arrange chicken on shallow baking sheet. Mix garlic and melted butter together. Pour over chicken, coating evenly. In small bowl, combine rest of ingredients, mix well. Sprinkle over chicken. Bake 45 minutes at 375°. Baste about every 20 minutes. Serves 4-8.
